For roughly 8,000 years, Georgia has proudly made wine. The beloved Mother Georgia statue overlooking the capital city of Tbilisi holds a sword in one hand and a wine cup in the other- symbols of the Georgian people’s passionate defence of their freedom, alongside their warm hospitality.


Lily Vanilli has been visiting Georgia for over ten years and has opened two well-loved bakeries in Tbilisi since 2017. Her partner in the bakery there owns a wonderful wine estate – Shilda – and they have partnered on bringing this wonderful Saperavi to the UK.

Lily Vanilli Saperavi 2022 is dark ruby in the glass, with aromas of forest fruits and plums. On the palate, it’s medium to full-bodied, with bright acidity and fruitiness. Clean, pure flavour profile. It pairs well with steak/ beef tartar and barbecued meat, and of course dessert.

The History
Many of the vines cultivated in Europe and Asia today are known to have Georgian origins. The Western words for wine—vin, vino, wine, and others—likely come from the Georgian word ghvino (or gvino).
As the Georgian wine revival gathers steam, today’s local winemakers are harnessing their national heritage to produce some of the world’s most distinctive wines. In the process, they’re transforming into an emerging artisanal powerhouse—tying wine’s deep past to a dynamic future.

Saperavi “The place of colour”
Deep in fruit character, yet brisk with acidity, the Saperavi unique alternative to everyday reds.
It’s the leading red variety in Georgia, and indigenous to the country.
It is one of the few Teinturier* grape varieties in the world – a grape with red flesh as well as red skin – lending it a deep, inky, and often fully opaque colour. It has aromas and flavours of dark berries, liquorice, sour cherry, tobacco, chocolate, and spices
