I worked with Bloomsbury’s Boutique Cafe and Artisan Bakery in Kochi, Kerala, as a consultant on the launch of their first Indian branch (I had been consulting with them on the concept for their UAE stores in Abu Dhabi and Dubai). I was based in Kerala for 6 months developing the full dessert menu for the restaurant and patisserie menu for the bakery, plus a celebration cake menu for cakes to order. I trained 8 pastry chefs, all from Kochi and consulted on the design and layout of the kitchen, patisserie counter and cafe. The concept was a celebration of Keralan flavours in Western style baking (English, American, French, Italian). I sourced all my ingredients from local suppliers and created seasonal menus around the magnificent fruit and flowers of Kerala.
