Billington’s is far and away my favourite sugar to bake with.
Their caster and icing sugars are literally golden, they sparkle and shine and you can see as well as taste the natural molasses that’s locked in. I now use them in everything and they’ve completely transformed the bakery for the better.
I have loved partnering with them over the past few years as it has given me countless opportunities to get creative with such high quality ingredients.
We created a giant edible wall of donuts for The London Coffee Festival, each filled with a delicious molasses salted caramel.
